Easy Meringue Pie

Few desserts are quite as pretty as a creamy meringue pie. But making a successful meringue does take a little time and skill. But the results are worth it. I have tried making meringue a few different ways but this is probably the easiest. This lemon meringue pie is simple because I just used a cooked lemon pudding mix for the filling but you could make that from scratch as well. But for the meringue, I have learned there are a few tricks:

  1. Egg whites must be beaten long enough but not too long.
  2. Adding sugar gradually is best
  3. Cream of tartar helps but not always necessary
  4. The vanilla was just for flavor. Very tasty!
  5. End product should be a white foam with stiff peaks and still a little shiny. If it becomes dull looking, you may have overmixed. Check out the video for more instructions.

You can use the same meringue technique to top any pie filling of your choice. It also goes great with coconut, chocolate or butterscotch pie. Easy Meringue Pie

Add meringue on top of any pie filling and you have an impressive dessert that pie lovers will drool over. Choose whatever pie filling you prefer.

Ingredients

  • 1 frozen pie crust, thawed and baked per directions

Meringue

  • 3 egg whites
  • 1/4 cup sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla flavor

Pie Filling

  • 1 Pie filling, prepared per directions

Instructions

Making Meringue

  • Separate egg whites from egg yolks. Place egg whites in clean bowl. Whisk egg whites together until frothy. Add sugar, cream of tartar and vanilla to egg whites and beat with mixer on high speed until stiff peaks form (about 2-3 minutes).

Preparing Pie Filling

  • Prepare pie filling as directed on box if using pudding mix. Pour pie filling into prepared crust.

Top with Meringue

  • Place spoonful of meringue on top of pie filling all the way around inside of crust. Fill in the center with meringue and smooth until pie filling is completely covered. Bake at 350 degrees F for about 15 minutes or until lightly golden brown. Chill at least one hour before serving.
