What is OurDailyChews.com?

Our Daily Chews began as the title of a newsletter I created for the nutrition department at the hospital where I was a clinical dietitian. It eventually became the name of this website and has evolved into a platform to share recipes and nutrition-related articles. The name “Our Daily Chews” seemed appropriate for a dental hygienist turned registered dietitian. What we eat or “chew” on everyday has major implications for our health and wellbeing. I hope you enjoy the recipes, videos, and articles.

My name is Lynn Clayton. I am a registered and licensed dietitian/nutritionist and certified diabetes care and education specialist in private practice in North Carolina. My professional specialty is the management of diabetes and associated conditions by using diet and lifestyle therapy alone or in combination with medication. My personal hobbies include music, writing, and spending time with my husband and two dogs on our farm.

Background

My first professional career was as a dental hygienist. After working in the dental field for over a decade and meeting my husband, I decided to pursue a career in nutrition. My goal was to learn more and help my husband manage type 1 diabetes. For the last fifteen years, my career in nutrition has involved working in public health, long-term care, acute rehab, cardiopulmonary rehab, oncology, in-patient and out-patient hospital care, private consulting and education.  I have taught diabetes classes along with my husband (who is a family nurse practitioner and diabetes educator himself) and provided nutrition counseling for a variety of conditions. My education experience includes fourteen years of teaching classes on basic nutrition to dental and culinary students at the community college level.

MY PHILOSOPHY
My philosophy is simple. I believe good nutrition is the foundational building block of good health.

WHAT I BELIEVE
Everyone makes choices in life based on their core beliefs. My beliefs are built upon my Christian faith so my life choices revolve around the core principles taught in the Bible. I believe this is God’s instruction manual for us to have the best lives (and health) He desires for us.

Chantel Biddix has a Bachelor of Science Degree in Foods and Nutrition, Dietetics from Appalachian State University.  She has worked in North Carolina public health for over 15 years, teaching families how to bring nutritious foods to their table and improve their health.  In 2021, she founded Chaos Averted Virtual Solutions to serve female entrepreneurs by taking tedious tasks off their to-do list through virtual assistance because she believes they should have time to focus on their favorite aspects of building their business and spending time with their families.
