Zucchini Bread

Looking for a healthier version of zucchini bread? Try this one. With a few modifications of the original recipe found on allrecipes.com, this zucchini bread turned out so delicious. It is moist with a great texture. If you don't like zucchini, don't worry. You really don't taste the zucchini. I shared it with my co-workers (mostly nutritionists) and they loved it. But you don't have to be a nutritionist to like it. Give it a try and let me know what you think. I forgot to take a picture of the zucchini bread so enjoy the photo of zucchini fresh from the garden that I used to make the zucchini bread. Enjoy!

Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 Tbsp ground cinnamon
  • 1 cup white sugar
  • 1 cup chopped walnuts or pecans

Wet Ingredients

  • 3 egg whites
  • 1/2 cup applesauce, unsweetened
  • 1/2 cup olive oil
  • 1 cup brown sugar
  • 1 Tbsp vanilla extract
  • 2 cups grated zucchini

Instructions

  • Grease and flour two 8×4-inch pans. Preheat oven to 325 degrees F (165 degrees C).
  • Sift flour, salt, baking powder, baking soda and cinnamon together in a large bowl.
  • In another bowl, combine egg whites, oil, vanilla, and sugars. Add sifted flour mixture to bowl and beat well. Stir in grated zucchini and chopped nuts until well blended.
  • Pour batter into prepared pans. Bake for 40-50 minutes, or until done. Cool in pan on wire rack for 15-20 minutes. Remove bread from pan and cool completely.

Notes

Note: No need to drain water from zucchini, it adds moisture to the bread. Original recipe called for 2 cups of zucchini. I used a little more because I had a very large zucchini. And it turned out just great. You can grate the zucchini with or without the skin. Leaving the skin just gives you more green color in the zucchini bread. 
You can use whole eggs (the original recipe called for 3 whole eggs) but I eliminated yolks to reduce calories and fat. 
Servings: Each loaf provides 6 servings for a total of 12 slices. 
Nutrition Facts: (per slice)
398 calories, 16 grams total fat, 2 grams saturated fat, 362 mg sodium, 261 mg potassium, 68 grams total carbohydrates, 3 grams fiber, 36.5 grams sugar, 5.7 grams protein. Provides 6% of DRI for calcium and 12% for iron.
