Ingredients
31/4 oz pktactive dry yeastEquals 2 Tbsp + 3/4 tsp of dry yeast
1/4cuplukewarm water
2tbspsugar + 1 tsp1 tsp added to yeast mixture
1tspsalt
2Tbspbutter, softened
2cupsmilk, scalded
6cupsflour, siftedAdjust amount as needed for proper dough consistency
Instructions
Add yeast to lukewarm water and 1 teaspoon sugar. Let stand about 5 minutes to activate yeast.
Combine salt, butter, remaining sugar and add milk. Cool to lukewarm. Add softened yeast and 3 cups flour. Beat well. Add more flour until just enough to make a soft dough. Place remaining flour on board and turn out dough on floured board. Knead until smooth and elastic.
Place in greased bowl and turn over so that greased side is on top. Cover with plastic wrap or a cloth and let rise until doubled in bulk (about 50 minutes). Punch dough down and let rise a second time if desired (about 30-45 minutes).
Remove dough from greased bowl and place on floured surface. Cut dough into halves and round into balls. Cover and let stand 10 minutes. Shape into loaves and place in greased loaf pans. Grease tops with butter or olive oil. Cover with a cloth and let rise until doubled in bulk.
Bake in preheated 400 degree F oven for 10 minutes. Reduce temperature to 375 degrees F and bake 35-40 minutes longer.
