Ingredients
5mediumpotatoespeeled
1mediumegg, beaten
2tbspbutter, melted
Instructions
Wash and peel potatoes. Place in saucepan of boiling water and cook until tender (or easily pierced with a knife) but not mushy, about 10-12 minutes. Cool potatoes by running under cold water.
Cut potatoes in half and then into 1/2-1 inch wide strips. Roll potato strips in melted butter and then in beaten egg. Place on ungreased baking sheet and cook in preheated 425 degree F oven for 25-30 minutes or until golden brown. Sprinkle with salt, pepper and parlsey as desired and to taste.
