Princess Potatoes

If you are tired of eating the same old potato, then give this recipe a try. With only 3 simple ingredients, you can make a tasty side dish of crispy potatoes that goes great with any meal. This recipe is a variation of one I found in my grandmother’s cookbook from the 1940s called “The American Woman’s Cook Book”. I love this cookbook because it only uses real ingredients and everything is made from scratch. By using wholesome ingredients, you can make great meals that are tasty and good for you. Princess Potatoes

Ingredients

  • 5 medium potatoes peeled
  • 1 medium egg, beaten
  • 2 tbsp butter, melted

Instructions

  • Wash and peel potatoes. Place in saucepan of boiling water and cook until tender (or easily pierced with a knife) but not mushy, about 10-12 minutes. Cool potatoes by running under cold water.
  • Cut potatoes in half and then into 1/2-1 inch wide strips. Roll potato strips in melted butter and then in beaten egg. Place on ungreased baking sheet and cook in preheated 425 degree F oven for 25-30 minutes or until golden brown. Sprinkle with salt, pepper and parlsey as desired and to taste.
