Good Morning Fruit Muffins

Instead of the apple and pecans found in this recipe, try berries. Good Morning Fruit Muffins

Ingredients

Dry Ingredients

  • 1.5 c flour Try using 1/2 cup whole wheat flour with 1 cup white flour to boost nutrients
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp sugar
  • 2 tsp ground cinnamon

Other Ingredients

  • 1 egg white
  • 1 cup milk
  • 1 tbsp butter, melted
  • 1 tsp vanilla flavor
  • 1/3 cup brown sugar
  • 1 cup chopped apples
  • 1/2 cup chopped nuts

Instructions

  • Sift together dry ingredients.
  • Combine egg white, milk, butter, vanilla and brown sugar. Add chopped apples and nuts.
  • Add wet ingredients to flour mixture. Stir until dry ingredients are moistened. Do not overmix.
  • Place about 1/3 cup of muffin mix into muffin liners or a greased muffin tin. Bake in preheated 400 degree oven for about 20 minutes or until golden brown. Remove from oven and cool on cooling rack.
