Does anything smell as good as homemade yeast bread right out of the oven? I say “not much”. If you love bread but dread the thought of consuming extra ingredients found in store bought bread, then you will love this recipe. With only 7 ingredients and some time, you can make great tasting bread for you and your family. Try making your own bread and you may never go back to buying bread again. You can make extra and freeze for later by wrapping in wax paper and placing in a freezer bag. Be sure to write the date on it and consume within 3 months. Enjoy!
Homemade Wheat Bread
Ingredients
- 3 1/4 oz pkt active dry yeast Equals 2 Tbsp + 3/4 tsp of dry yeast
- 1/4 cup lukewarm water
- 2 tbsp sugar + 1 tsp 1 tsp added to yeast mixture
- 1 tsp salt
- 2 Tbsp butter, softened
- 2 cups milk, scalded
- 6 cups flour, sifted Adjust amount as needed for proper dough consistency
Instructions
- Add yeast to lukewarm water and 1 teaspoon sugar. Let stand about 5 minutes to activate yeast.
- Combine salt, butter, remaining sugar and add milk. Cool to lukewarm. Add softened yeast and 3 cups flour. Beat well. Add more flour until just enough to make a soft dough. Place remaining flour on board and turn out dough on floured board. Knead until smooth and elastic.
- Place in greased bowl and turn over so that greased side is on top. Cover with plastic wrap or a cloth and let rise until doubled in bulk (about 50 minutes). Punch dough down and let rise a second time if desired (about 30-45 minutes).
- Remove dough from greased bowl and place on floured surface. Cut dough into halves and round into balls. Cover and let stand 10 minutes. Shape into loaves and place in greased loaf pans. Grease tops with butter or olive oil. Cover with a cloth and let rise until doubled in bulk.
- Bake in preheated 400 degree F oven for 10 minutes. Reduce temperature to 375 degrees F and bake 35-40 minutes longer.

Tips:
Substitute olive oil for butter to cut saturated fat in half (although your total fat and calories will remain about the same).
To save calories, slice bread into 1/2 inch slices instead of 1 inch. 🙂
