I LOVE biscuits. I am a southern girl for sure and there are few things more southern than a biscuit. If you are looking for a light and easy biscuit recipe, I think you will love this one. This recipe is a healthier version that is low in fat with no saturated fat. It is also low in sodium and sugar. These light and fluffy yeast biscuits are simple to prepare and take only 10 minutes to bake. This recipe makes 4 dozen 2-inch biscuits. You can mix by hand but a mixer makes it even easier. These are good with eggs or a little honey. Try them and let us know how you like yours.

Light Yeast Biscuits

Looking for a healthier biscuit option? Forget the canned or frozen biscuits. Make your own and enjoy all the taste without the preservatives. These are great to make ahead and store in the fridge or freezer for later.

Cook Time 10 minutes
Total Time 30 minutes
Servings 48 2-inch biscuits

Ingredients

Dry Ingredients

  • 1 package active dry yeast
  • 5 cups unbleached white flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 3 Tbsp warm water (100-110 degrees F) Not too hot or it will kill the yeast
  • 1/4 cup honey
  • 1/2 cup olive oil
  • 2 cups buttermilk, at room temperature

Instructions

  • Preheat oven to 400 degrees F.
  • Sprinkle yeast on top of water water and mix. Set aside. Combine remaining dry ingredients and mix together. Add oil and honey to flour mixture. Pour in buttermilk and yeast mixture. Mix until combined. Do not over mix.
  • Turn dough out onto floured surface and knead a few times to make sure dough is combined. Pat or roll out dough into 1/2-1 inch thickness. Cut with a 2-inch biscuit cutter and place on greased baking sheet
  • Bake at 400 degrees F for 8-12 minutes or until lightly golden brown.

Notes

These are also known as angel biscuits.
